Be in Melbourne for the Australian Rules Grand Final in September and also one of the richest horse races in the world the Melbourne Cup (1st Tuesday in November).

The most important thing you have to do is feel the space. Get out in the back of beyond, see a starlit sky without one artificial light spoiling. Fall asleep to the sound of the dingoes. Thats what you have to do.
You can do the other things most anywhere.

I completely agree with ixlinxs . Those are the two unique things you must do in Australia – Australian Rules football at the MCG and the Melbourne Cup if you’re into sports and both are experiences you won’t find anything like anywhere in the world: climb the Sydney Harbour Bridge; go whitewater rafting near Cairns in the wet season; go scuba diving on the Barrier Reef as you already intend doing; hand feed the dolphins at Monkey Mia in northern Western Australia, or if you don’t want to go that far (though it’s worth the trip) at Tangalooma on Moreton Island near Brisbane; drive along the beach at Fraser Island or on the Rainbow Sands at Cooloola Beach north of Noosa Heads; attend one of the major surf carnivals along the east coast; go barramundi fishing in the far north; see Kakadu National Park in the Northern Territory and heaps more that I can’t think of now. Enjoy!

Melbourne is great for sports (Australian Rules Football, Cricket, Australian Tennis Open, Australian Grand Prix etc. etc.) If you are really into diving, I would do a dive boat charter which goes out to the reef for a few days and lets you dive at all kinds of different sites. One day trips are relatively expensive and you spend half the day travelling out to the reef and back. I think a trip to Fraser Island and an adventure tour through the Kimberlies is a must do. What about Ningaloo Reef on the west coast (diving with whale sharks etc.)?
It is such a big country and there is so much to see and I don’t know how long you have or what your budget is so it is hard to say what else you should do. I am sure you will have a good time regardless.
